The reason is simple, there are more and more stablecoins in circulation, and people's demand for stablecoins is simple: payment or transaction.
Cex's natural KYC and compliance thresholds block many people's trading paths, with high fees, and even arbitrary pin cutting users.
It's not that the AMM model of the Dex is no longer good, but the stablecoin-based trading pair, and CLOB currently wins in terms of product experience (with abundant liquidity).
